We designed our food truck to have a minimalistic, neutral design so that it can fit in with at any event, from a backyard birthday to a sailcloth tent wedding.
Wandering Agave Food Truck runs off of solar electric generators, this allows us to power our truck silently so that you can enjoy the music, or celebration without the fumes and noise that a gas powered generator can create.
Wandering Agave truck can be used as an extension of Something Blue Catering and Cocktails, meaning you are not limited to our brewery/community events menu. We have served Italian food, pub food, and global eclectic mix menus out of the truck for private events.
Find us out and about at your favorite locale. When at public events we present a modern Mexican menu that fuses local produce and global flavors with traditional Mexican recipes and techniques. Catering menus are specially curated for each client and can be any style of cuisine (think Italian, locally inspired, or whatever you desire)
Chips & Guac: House-made tortilla chips, with fresh creamy guacamole.
Shrimp Coctel: Shrimp marinated in a tangy sauce with crisp cucumber, red onion, and cilantro.
Rice and Beans: Heirloom giant acoyote beans made from scratch with garlic and avocado leaves and our red tomato rice.
Concha Ice Cream Sandwich: We partner with Conchitas Bakery to provide the best Mexican pastries that CT has to offer and stuff them with locally made ice cream.
Yuzu Shrimp: Succulent large shrimp cooked to order seasoned with Japanese yuzu and soy marinade topped with crunchy citrus slaw and mango salsa.
Birria: Traditional beef birria with melted Oaxaca cheese and consomme for dipping
Pork Carnitas: Crispy pork belly and tender shredded pork butt topped with house-made tomatillo salsa, pickled red onion, and sweet diced pineapple
Shroom Al Pastor: Griddled oyster mushrooms in chile marinade, with diced pineapple, onion, cilantro, and green salsa.
Traditional crispy Oaxacan tortilla with heirloom black beans, melty Oaxacan cheese, avocado, fresh tomato, radish, and crunchy lettuce. Choose any taco filling as a topping!
